San Francisco native, Jose Calvo Perez is the talented and prominent Executive Chef and Owner of Pasion; as well as the culinary face and mind behind Fresca’s Peruvian Restaurants located throughout San Francisco. Jose is introducing this lively city by the bay to his contemporary interpretation of Modern Latin Cuisine.
Jose grew up working in the kitchen with his father Julio. “I was just a young kid in high school helping my father in his restaurant, Fresca. I would go in on the weekends and sometimes after school, but it was a way to be close to my dad. I idolized my father for his work ethic and leadership. It drove me to take this business to the next level. So being able to work alongside him gave us quality time together and the experience that certainly helped define my career.”
After graduating from Archbishop Riordan High School Jose went on to study at the San Francisco City College Hotel and Restaurant Department as well as the California Culinary Academy. Upon graduation, Jose moved to Spain and worked under Spanish chef Jose Rodriguez at his popular restaurant Maritimo on the Island of Mallorca. This is where Jose gained a true appreciation and understanding of Spanish Cuisine. Jose furthered his education and style of cooking by tasting and working his way through Peru, Puerto Rico, Spain, France and Italy.
After Jose’s culinary journey through Europe he came back to San Francisco and opened a second and third branch of Frescas in the popular Pacific Heights and Noe Valley districts.
Now, Jose brings an understanding of the exquisite flavors and techniques of all of Latin America to his kitchen at Pasión, offering modern day twists and preparations for the entire Bay Area. The 60-seat restaurant brings the enthusiasm and liveliness of South American, Central American and the Latino Carribean, pulling influences from Peru, Argentina, Uruguay, Brazil, Mexico, Puerto Rico, Cuba and Spain.
